Beef Fajita

Easy and quick to prepare, this fajita recipe is delicious and full of bold flavours.
INGREDIENTS
- 4 dollops Hellmann's Light Mayonnaise
- 1 tomato, finely chopped
- 1 teaspoon paprika
- 1/2 red chilli, deseeded and finely chopped
- 2 tablespoons olive oil
- 400 g sirloin or beef fillet steak, sliced into 2 cm strips
- 1 red onion, sliced
- 1 red pepper, deseeded and sliced
- 1 courgette, thinly sliced
- 4 tortilla wraps, warmed
- 3 tablespoons coriander, roughly chopped
METHOD

Combine Hellmann’s Light Mayonnaise, tomato, paprika and red chilli in small bowl. Set aside.

In a large frying pan, heat the oil over high heat. Add the steak strips and brown for about 3 minutes. Add the onion, red pepper and courgette. Cook for 3 minutes.

Arrange steak and vegetables in the middle of the tortilla. Top with the mayonnaise mixture and coriander.
