Ribs were on every menu from Nashville to Charleston. Chefs start at 3am before serving the slow-cooked goodness from 12.

INGREDIENTS

  • 1 rack of pork spare ribs with a lot of the fat and membrane removed
  • 1 tablespoon olive oil
  • 50 ml cider vinegar
  • 50 ml apple juice
  • 50 ml Hellmann's Mexican Chipotle Sauce - Medium
  • 50 ml Hellmann's American Smokey BBQ Sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon Maldon salt
  • 1 tablespoon cracked black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 teaspoons of garlic granules
  • 1 teaspoon onion granules
  • 1/2 teaspoon of mustard powder

METHOD

  1. Prepare a BBQ smoker to 130C

  2. Take the rib rack and rub with the oil on both sides.

  3. Rub with the RAD rub and smoke In the BBQ, meat side down for 2 hours.

  4. After 2 hours, glaze with half chipotle and half BBQ sauce on both sides, smoke for another 20 minutes.

  5. After 20 minutes take a large sheet of foil (doubled up), lay it out and spread out any leftover glaze you have.

  6. Lay over the ribs and pour a little of the vinegar and apple mix over.

  7. Finish off with a little more glaze and wrap the foil tight. Place back in the BBQ for another 2 hours until tender.

  8. Slice up the ribs and serve with salad (serving suggestions below)
