Grilled Salmon

Versatile grilled salmon recipe is juicy, tender and big on flavour.
INGREDIENTS
- 4 dollops Hellmann's Real Mayonnaise
- 1/2 red onion, finely chopped
- 2 tablespoons chopped fresh coriander
- 1 tablespoon fresh lime juice
- 4 salmon fillets
- 2 tomatoes, finely chopped
- 1 large head romaine lettuce leaves, roughly torn
METHOD

In medium bowl, combine Hellmann's Real Mayonnaise, onion, coriander and lime juice.

Pour a quarter of the mayonnaise mixture into a separate bowl for brushing onto salmon. Set aside remaining mayonnaise mixture to use as dressing.

Brush the top of the salmon with the mixture. Heat a griddle pan, and grill salmon fillets for 5-6 minutes on each side, turning only once. Upon turning, brush salmon fillets again with mayonnaise mixture

Stir tomatoes into the remaining mayonnaise.

To serve, arrange salmon over lettuce and drizzle the mayonnaise dressing over the salmon and the lettuce leaves.
