Tiger Prawn Salad with Veggies

Try this salad made with freshly cooked tiger prawns, avocado, chilli, spinach & broccoli & wrapped in creamy Hellmann’s Thousand Island Dressing.
INGREDIENTS
- 1 red chilli chopped
- 1 garlic clove crushed
- 1 onion chopped
- 1 tbsp olive oil
- 200 g raw tiger prawns
- 1 broccoli cut into florets
- 140 g spinach leaves
- pinch paprika powder
- 1 lime zested
- 1 red pepper deseeded cut into cubes
- 1 garlic clove finely chopped
- 2 avocados sliced
- 70 g feta cheese cubed
- 50 g goji berries optional
- 4 tbsp Hellmann's Thousand Island Salad Dressing
METHOD

Heat the oil in a pan and cook the chilli, garlic and onion for 1 minute.

Add tiger prawns to the pan and cook until they turn pink, 2-3 minutes.

Cook broccoli in boiling water for 3-4 minutes adding spinach at end until just wilted.

Mix prawns with paprika, red pepper, avocado, zest and juice of lime and Hellmann’s Thousand Island Dressing.

Spoon the veggies onto serving plate and top with the prawn mix. Sprinkle with feta cheese and goji berries if used.
